Ingredients:
1 pound of high-quality beef tenderloin, finely minced
2 tablespoons of capers, finely chopped
2 tablespoons of cornichons (small pickled gherkins), finely chopped
1 shallot, finely minced
2 tablespoons of Dijon mustard
2 tablespoons of Worcestershire sauce
1 tablespoon of Tabasco sauce (or to taste)
2 egg yolks
Salt and pepper to taste
Chopped parsley for garnish
Toasted bread or French fries for serving
INSTRUCTIONS
In a large bowl, combine the minced beef, chopped capers, cornichons, and minced shallot.
Add the Dijon mustard, Worcestershire sauce, Tabasco sauce, and egg yolks to the bowl. Mix well to combine.
Season the mixture with salt and pepper to taste, adjusting the seasoning as needed.
